Brian Molino is devoted to leading the way in supporting farm-fresh food. Executive chef at Marché at 74 State in Albany, he likes “bringing a fun approach to fresh dining by using local products in innovative and creative ways.”
“Spontaneity is one of the best parts of my job. Walking through the farmers’ market and picking what looks fresh, then taking it back to the restaurant to create a special for the night is one of my simple pleasures. Plus, I get to cook and eat all day long!”

When he was in high school, Molino wanted to be a scientist. “After a short internship, I learned that it wasn’t quite what I wanted. I started another internship in the kitchen at Normanside Country Club and that’s when I realized cooking wasn’t just a job, but it could be a great career.”...The Business Review |
